Stuffed eggplant with beef and shredded Leerdammer

Leerdammer Original cheese – 250 g;
walnuts – 5 pieces;
grapes – 100 g;
green olives – 100 g;
skewers or toothpicks

 

Mediterranean canapé with cheese, grapes, green olives and walnuts

Instructions

- Cut Leerdammer cheese into slices and roll them;

- Thread each cheese roll with a skewer or a toothpick;

- Thread grapes and olives at both sides of cheese, cover with a walnut;

- Serve prepared canapé on a plate.

Ingredients  Ingredients:

- 2 large eggplants
- 300 g ground beef
- 1 egg yolk
- 10 green olives, 1 onion
- 60 g shredded cheese Leerdammer
- Salt, pepper, thyme

Stuffed eggplant with beef and shredded Leerdammer

Instructions

- Cut the eggplants in half lengthwise, then use a spoon to remove their flesh.

 - Place in mixing bowl the eggplant flesh, ground beef, egg yolk, chopped onion, olives cut into pieces, 30 g of shredded Leerdammer cheese, thyme, salt and pepper. Mix well to obtain a homogeneous consistency. 

- Place the eggplants in a dish, stuff them with the mixture, tamp it down and sprinkle with the remainder of the Leerdammer shredded cheese.  

- Put in oven for 40 min at 180C.

- 4 thin slices of smoked ham
- 8 slices of salami
- 1 loaf of whole wheat bread
- 2 slices of Leerdammer cheese
- 8 pieces of grilled red and yellow pepper
- Salt, pepper

TOAST WITH LEERDAMMER

Instructions

- preheat the broiler to maximum heat

- slice the bread in half

- cover each slice with the smoked ham, salami and pepper

- sprinkle with salt and freshly ground pepper and cover with a slices of Leerdammer.

- Broil in oven for five minutes just until the cheese melts and turns golden brown.

- Eat while hot!

- 8 potatoes
- 2 hard-boiled eggs
- 75 grams of green beans
- olive oil
- 2 fresh tuna steaks
- 75 grams of mesclun salad
- 4 tomatoes
- 16 black olives
- 200 grams Leerdammer Original cheese
- 6 tablespoons of olive oil
- 2 tablespoons vinegar
- Juice of half a lemon
- 2 teaspoons of mustard
- salt and pepper
Nicoise salad and Leerdammer Original

Instructions

- Cook the potatoes (15-20 min) and eggs (10 min)
- Trim the green beans and blanch them in boiling water for one and a half minutes.
- Preheat a heavy bottomed skillet
- Drizzle olive oil on the tuna steaks and sprinkle them with salt and pepper. Grill the tuna steaks on high heat for 1 to 2 minutes per side
- In a salad bowl, arrange the lettuce, green beans, halved potatoes, tomatoes, quartered boiled eggs, black olives, tuna cut into small pieces and cubes of Leerdammer Original cheese
- Season the composed salad by mixing the salt, pepper and vinegar, then add the mustard, olive oil and lemon.

- 500 grams  rigatoni
- 200 grams zucchini
- 200 grams carrots
- 150 grams spring onions
- 300 grams chicken cutlets
- 60 grams shredded Leerdammer Original cheese
- 2 tablespoons olive oil
- 25 centilitres of dry white wine
- 8 tarragon leaves
- Salt, pepper

Stuffed eggplant with beef and shredded Leerdammer

Instructions

- cook the rigatoni;
- while the rigatoni is cooking, slice the chicken cutlets into thin strips, cut the vegetables into matchsticks and slice the onion;
- in a large skillet, brown the chicken in the olive oil, then add the vegetables and onions and heat them through for about 5 minutes while stirring (the vegetables should remain crisp);
- pour in the wine. Remove from heat and add rigatoni, then stir in the shredded Leerdammer cheese;
- decorate with tarragon leaves
